I love a simple meal. Nothing makes cooking muscle building diet meals easier than a crock pot. A slow cooker is great for busy gym rats. All you have to do is throw the ingredients in. Then you can set it, and forget it. When you get back everything is ready. All you need to do is, serve, and enjoy.

Today I have a killer crock pot recipe for you. If you love a little heat you will really enjoy this muscle building recipe. Kielbasa and Spicy Cajun Chicken is an excellent alternative to beef. It also provides a nice change from the typical chicken and vegetable meals many bodybuilders eat.

Kielbasa and Spicy Cajun Chicken

Ingredients:

  • 2 tbsp Cooking oil
  • 1 1/2 cups Chopped onion
  • 1 cup Chopped red pepper
  • 1/3 cup Chopped celery Garlic cloves, minced
  • 2 tbsp Whole Wheat organic flour
  • 1/3 cup Sliced green onion
  • 10 oz Lean kielbasa, (sausage from Poland) cut into 6 pieces and halved lengthwise
  • 10 (about 3 oz., 85 g, each) Boneless, skinless chicken Thighs
  • 1 Bay leaf
  • 1 Cup of Low Sodium Chicken Broth
  • 1/2 cup Chili sauce
  • 1 1/2 tsp Chili powder
  • 1/2 tsp Dried basil
  • 1/2 tsp Dried oregano
  • 1/4 tsp Ground thyme
  • 1/4 Pepper

How to make your Spicy Kielbasa and Cajun Chicken

  1. Heat cooking oil in large frying pan on medium-high.
  2. Add next 4 ingredients (onion, red pepper and celery).
  3. Cook for 3 to 4 minutes, until onion is softened. Be sure you are stirring often
  4. Sprinkle with flour.
  5. Heat and stir for 1 minute.
  6. Put in slow cooker.
  7. Over the vegetable mixture layer, in order… sliced green onion, lean kielbasa and skinless chicken thighs.
  8. Add bay leaf.
  9. Combine frying pan… low sodium broth, chili sauce, chili powder, dried, basil, dried oregano, ground thyme and pepper.
  10. Heat and stir on medium for 5 minutes. Pour cooked mixture over chicken.
  11. Cover and cook everything on low for 7 to 8 hours. Or cook on high for 3 1/2 to 4 hours.
